Do you find yourself munching on unhealthy snacks throughout the day because you feel like you have no healthy options around? Well, here is a great healthy snack to enjoy in between meals. This is also great to serve as a healthy appetizer!
Eggplant Dip
Ingredients: 1 large eggplant, olive oil, 1/4 chopped yellow onion, salt, and minced garlic.
Preheat oven to 450 degrees. Place eggplant in a Pyrex dish with 1-2 inches of water. Bake for 1 hour. Remove from oven and cut the eggplant in half the long way. Scoop out all the inside of the eggplant and transfer to a large bowl.
Add about 1/4 of a chopped onion and stir well. Add a couple of tablespoons of olive oil (more or less depending on the size of the eggplant). Add salt and minced garlic to taste.
Refrigerate and enjoy throughout the week as a healthy snack with crackers, such as Reduced Fat Triscuits.
