Interval Core (In-Home)

-squat side kick right, squat side kick left (25 reps, 50 total kicks)
-20 burpees
-50 mountain climbers
-100 oblique twists (wacky jacks)
-100 jab punches (as fast and hard as you can)
-25 jack planks

1 minute break.
REPEAT 5 TIMES

ABS:
20 basic crunches
1 minute flutter kicks
50 bicle crunches
REPEAT
add any challenging abs of your choice. For those of you that attend my classes...you know what to do:)

Seasame Vinaigrette Tuna Spinach Salad

Ingredients:
-1 can of albacore tuna in water
-apx. 1/3 bag of spinach leaves, but you can always add more if desired!
-Sesame Balsamic Vinaigrette from Trader Joe's (35 calories per serving)

*open tuna and drain all the water out. Transfer into a large Tupperware container.
*break tuna up with your hands, so you can get it very then, and leave no large chunks
*add desired amount of spinach leaves for your salad
*add desired amount of Sesame Balsamic Vinaigrette Dressing, and place lid on the container
*shake the container well, remove lid and mix with fork. ENJOY!

Oven roasted Tilapia

-Get frozen Tilapia fillets from Trader Joes
-defrost (just leave the package unopened in the sink for a few hours. check on it periodically)
-preheat oven to 425
-open package, and place fillets in a pirex dish. brush both sides of fillets with olive oil, and season with salt and pepper.
-bake for 7 minutes, remove from oven and flip the fillets over
- **pour spinach and veggies over fillets now**)
-bake for an additional 3-4 minutes.
-check fish to make sure it is ready. should be flaky. If it is not, bake for a couple extra minutes.

**while fish is in the oven, take spinach leaves and mushrooms and place them in a large frying pan.
-drizzle with olive oil, salt and pepper
-move contents around with spatula, and cook until desired tenderness is reached.

Class Schedule update

OK- so it looks like I am going to go forward with the North Avenue Beach classes on Mondays and Fridays. The info about the class is accurate below. Classes will begin June 13.

Mondays: 9am Cardio Mix, 10am Muscle Max (PIPERS ALLEY)
Tuesdays: 7:30pm Cardio Sculpt (STATE STREET)
Wednesdays: 6:30pm Boot Camp (PIPERS ALLEY)
Saturdays: 9am Aqua (PIPERS ALLEY), 11:15 Kick (FIT LINCOLN PARK)

Friday Classes earlier than June 13?

It's been a while! I have been crazy busy with graduate school and teaching that I have been neglecting my blog! Well I'm back:) I would like to do an outdoor boot camp in the Lakeview area this summer so please email me and give me feedback if you are interested!
